To us, a menu isn't a concept. It's what came to the table at home. The Frankfurt schnitzel of milk-fed veal, pork knuckle in Krombacher sauce, bratwurst and beef sausage made to our own recipe, produced for us. The Hühnermarkt salad with chicken whose preparation and dressing still date from our Michelin-star days on the Freßgass. Everything is cooked fresh every day, and there's always something without meat. Where the herbs for the green sauce come from and who fills the apple wine into the barrel? Right below. By name.
