We take our time — for every place setting, every hand movement, every dish. Fresh herbs from Oberrad, asparagus in spring, sausage from our own production.
What began in 1959 as Metzgerei Zarges is now the Wirtshaus am Hühnermarkt. Two generations, one standard: honest Frankfurt Wirtshaus culture.
Wood paneling, warm lamps, upholstered bench — a place where a visit quickly becomes a long evening, in the heart of the New Old Town.
Our little square between the Cathedral and the Römer is one of Frankfurt’s oldest inhabited places. In the Middle Ages, chickens and other small poultry were traded here — hence the name. The square lay right on the coronation route of the German emperors, and young Goethe knew these alleys well: his aunt Johanna Melber lived just opposite.
The previous building already stood around 1405 and was called Haus Schildknecht. With almost two meters of floor overhang, it projected so far over the alley that one could think it was about to tip over. At times it was the guild room of the shoemakers — popularly simply “the shoe house”. Today, the Stoltze Fountain splashes again in the middle of the square, named after the dialect poet Friedrich Stoltze.
Part of our rooms belongs to the neighboring house Markt 16, the “Kleines Seligeneck” — not only upstairs, but also on the ground floor. Anyone walking through the Wirtshaus changes from one house to the other along the way without noticing it. Just like in the old Old Town, where the townhouses stood wall to wall.
In March 1944, Frankfurt lost its Old Town in a single night — our house and the entire Hühnermarkt also fell victim to the bombs. From 1974 to 2012, even the Technical Town Hall stood here, a gray concrete block. Only with the Dom-Römer project was the Hühnermarkt rebuilt: in 2018, the square was back where it belongs.
We call the sociable main area the Schwemme — an old Wirtshaus word. Originally, a Schwemme was the shallow part of a body of water where horses were watered. In the 16th century, it became the serving area where beer flowed in large quantities — at long tables, without formality. That is exactly how we understand our Schwemme today.
When the Hühnermarkt reopened in 2018 after 74 years, we moved in with it. Where chickens were once traded, coronation processions passed by and shoemakers had their guild, today we cook Frankfurt cuisine and serve fresh and cold from the tap — apple wine from the Bembel or Krombacher in the glass. Come by. Sit down. And become part of this history.
